As a multi-Michelin-star chef, Michael Caines has long been a champion of the South West and its outstanding larder. Here at The Harbourside Refuge, he looks forward to working directly with local producers and suppliers, utilising the abundance of fabulous and world-class produce and ingredients literally on his Cornish doorstep. Sustainable fishing and support for a sustainable Cornish fishing industry is vitally important to Michael, and to us all. Michael and his team work only with sustainable seafood and shellfish. Michael has worked with the acclaimed Cornish Duck for many years, and also looks forward to working with other nearby farms for the supply of local meats, and with Cornwall’s outstanding farmhouse cheesemakers. Cornwall is a rich agricultural county and The Harbourside Refuge will celebrate its bounty.
Michael is focused on reducing the amount of single-use plastic across his portfolio. He and his team are dedicated to reducing its use wherever possible, doing away with the need for excessive plastic-wrapping.
